Sierra Nevada Pale Ale CLONE

The original American Pale Ale, big on hops and very moreish

3.7 kg Ale
450g Munich
200g Light Crystal
200g Carapils
25g Northern Brewer (7.7% AA) (60min boil)
10g Northern Brewer (7.7% AA) and 20g Cascade (6.3% AA) (15min boil)
1tsp Irish Moss/Whirlfloc (10min boil)
20g Cascade (6.3% AA) (0min boil)

Combine 13 litres of 71°C water (strike temp) and the malts in the Mash-Tun. Rest at 65°C for 60mins. Add 8 litres of boiling water to raise to 75°C and rest for 20 minutes. Recirculate and run-off. Sparge with an additional 7.5 litres of 75°C water to make a pre-boil volume of approximately 26 litres.

FERMENTATION:
Cool the wort and aerate well. Start fermentation as close as possible to 18°C*, preferably with Wyeast 1056 American Ale, Safale US-05, or Mangrove Jack’s M44 US West Coast yeast. On the 5th day of fermentation dry hop with 30g Cascade hops for 5 days.
